Balfour Farm in Pittsfield is one of only two organic dairy farms making farmstead cheese in the state of Maine. Heather Donahue owns and operates the 100-acre farmstead, where a family herd of Normande cows produces every drop of milk that goes into the cheese.

The cows and pigs rotationally graze the fields and forests, and the pork becomes small-batch salamis made by hand with non-GMO feed and no added nitrates or nitrites. Sixty solar panels power the operation, with a diesel generator on standby.
