Springdale Farm in Waldo has milked Jersey and Guernsey cows for over 100 years, and the current generation has turned all that rich milk into something special. Carrie came back to the farm in 2011, opened a farmstead creamery in 2015, and in 2019 the family bought the State of Maine Cheese Company and moved its production right to the farm.

The cheese case runs from fresh cream cheese in several flavors to Triple Cream Brie, Queso Tencho, and squeaky fresh curds, alongside charcuterie and pasture-raised meats: rose veal, Jersey beef, and whey-fed pork. They ship cheese and charcuterie boxes anywhere in the USA.
