Pooling 86 estimates from 35 separate studies, this analysis found shoppers really do pay more for local food, typically an extra $1.70 to $2.08 per pound, with the premium even higher for local meat and dairy than for produce. The "local costs more" line isn't a myth. It's also apparently a price people choose to pay.

Oyster farms in New Hampshire's Great Bay estuary remove real, measurable pollution just by growing. This study estimated they pull 0.61 metric tons of nitrogen out of the water each year, worth about $105,000 in avoided cleanup costs, and that number could quadruple if farming areas expanded. Every harvested oyster takes a little bit of excess nitrogen with it.
This paper mapped bees across several cities and found that community gardens and small urban farms were some of the richest pollinator hotspots. In other words, little food-growing patches in cities punch way above their weight in supporting bees and other insects that keep plants alive.

In more than 100,000 French adults, higher intake of ultra-processed foods was associated with higher risks of overall cardiovascular disease, coronary heart disease, and cerebrovascular disease. In this controlled trial, the same people were fed two diets with identical calories and macros on paper: one ultra-processed, one made from minimally processed foods. On the ultra-processed diet they automatically ate about 500 extra calories a day and gained weight; on the whole-food diet they lost weight, without being told to restrict.
This meta-analysis pulled together 24 cohort studies looking at how much poultry people eat and their risk of heart disease, stroke, and early death. Overall, they found no strong evidence that typical poultry intake increases cardiovascular risk; if anything, the association was tiny and slightly protective at moderate intakes. The authors point out that how poultry is cooked (grilled vs fried vs ultra-processed) likely matters more than the bird itself.
This huge study across 18 countries found that people who ate more fruits, vegetables, and legumes had fewer heart attacks, strokes, and deaths overall. The sweet spot was around 3–4 servings per day in many settings, which is still “normal life doable,” not some extreme diet.
