In September 2013, Philip and Michele Desautels became stewards of a piece of the old Shaw's Ridge II dairy farm in Springvale. They are first-generation farmers, though farming runs deep on Michele's side: her relatives operated one of the largest orchards in Connecticut going back to the 1600s.
They started with apples and blueberries and have kept adding perennial and annual fruits and vegetables, all grown with organic and holistic practices. The fun part is what happens after harvest: their crops become small-batch apple cider caramels, ice cream, pesto, and baked goods, with sauerkraut, pickles, and jams on the way, sold locally and at the farm stand.
