About the Farm

Gray Farm Maple works land in Denmark first carved out by Daniel Gray and his family after the War of 1812; several miles of their stone walls still run through the woods. Barry and Carol Kallander now operate the farm.

They started in 2011 with ten buckets and a flat pan over a wood fire. Today a vacuum pipeline gathers most of the sap, though some trees still wear traditional spouts and buckets, and everything is boiled in a wood-fired evaporator, filtered, and finished to Grade A standards. It takes 40-plus gallons of sap to make each gallon, sold in glass bottles and plastic jugs.
